Home dry-aging cabinet

For the keen home BBQ beef lover who already has everything, comes the latest bit of kit: a home-scale dry aging cabinet.

Looking something like a small wine fridge, this unit from Kogan retails for $1199. Its big enough to hold three or four small bone-in rib-racks, T-bones or similar, with sturdy supports for heavy cuts.

The refrigerated cabinet holds product at 2-3 degrees C, while reducing humidity to as low as 50pc. Salt blocks can be added to further the moisture extraction process, and the unit includes UV light for bacterial control. Humidity and temperate are displayed digitally.

The unit has built-in LED lighting and a glass front to monitor progress. A door alarm alerts the user if the door is left ajar. The 52L volume of the dry ager strikes the perfect balance between capacity and efficiency, making it an ideal choice for passionate home cooks, and an interesting conversation piece in any bar or outdoor kitchen.
