THE Wagyu industry’s annual WagyuEdge conference has grown to become one of the largest annual events on the Australian beef industry calendar, and next year’s event being held in Adelaide in April is shaping up to follow that trend.
The 2027 conference will be at the Adelaide Convention Centre from 27-29 April.
The event is timed to sit neatly beside the triennial Beef 2027 event being held in Rockhampton Queensland the following week.
This year’s WagyuEdge event held in Brisbane attracted a record attendance of more than 800.
In the heartland of some of Australia’s premium wine and food country, Adelaide provides the perfect backdrop for a conference focused on luxury, provenance and premium consumer experiences.
With the Australian Wagyu industry estimated to contribute 80 percent of the world’s exported Wagyu beef, WagyuEdge’27 will explore how the industry can strengthen its position as the world’s benchmark luxury meat brand.

Next year’s expanded program is designed to bring together Wagyu breeders, lotfeeders, processors, exporters, supply chain managers, researchers, chefs and industry leaders from around the world.
One of the themes will be redefining how the premium beef sector creates, protects, and captures high-end market value. It is designed to establish a comprehensive narrative framework, covering production excellence, consumer demand, global markets, brand building, and establishing the ultimate luxury experience.
WagyuEdge typically brings together diverse industry stakeholders from across Australia, New Zealand, the Asia Pacific region, North America and elsewhere, for a high impact program focusing on premium brand provenance and exploring structural shifts in global wealth and market opportunities.

In addition to the extensive conference program, WagyuEdge 27 will host the high-profile Wagyu Branded Beef Awards (judging takes place next month), social events and the Elite Wagyu Sale. The Wagyu industry dinner will be held across the road at the hallowed Adelaide Oval cricket ground. The timing of WagyuEdge ’27 creates a strong back-to-back travel incentive for local and international stakeholders. By concluding immediately before the Beef Australia 2027 event in Rockhampton, delegates can seamlessly transition into a massive two-week celebration of global beef education, trade, and innovation.
Pivotal time for industry
Australian Wagyu Association chief executive Dr Matt McDonagh said next April’s conference comes at a pivotal time for the industry, as Wagyu continues to strengthen its position in premium food markets worldwide.
“The global Wagyu industry has reached an exciting inflection point. The conversation is no longer solely about production; it’s about how we build, protect and grow demand for one of the world’s most aspirational food products,” Dr McDonagh said.
“The response to WagyuEdge’26 demonstrated the appetite for meaningful industry conversations and the strength of the Australian Wagyu community. Building on that momentum, next April’s event will bring together some of the industry’s leading minds within a global focus, to explore how production excellence, innovation, branding and consumer demand work together to create long-term value.
“In creating the future of Wagyu, we need to extend our thinking well beyond the farm gate. Success increasingly depends on our ability to create value, build brand authority, understand consumers and deliver exceptional experiences. WagyuEdge’27 is designed to bring those conversations together and help shape the next chapter of growth for our industry.”
Across three days, delegates will hear from a strong line-up of Australian and international speakers exploring topics including:
- The Next Generation of Luxury – Building on the Legacy, Shaping the Future
- Luxury By Design – Genetics, Technology and Innovation
- Tomorrow’s Table – Future Trends, Food Culture and Demand Creation
- Wagyu Without Borders – Winning in Global Premium Markets
- Creating Desire – Brand Building, Storytelling and Market Positioning
