Australia’s butchering industry has a new World Champion.
Twenty-four-year-old Toowoomba butcher Luke Thomas from Millers Gourmet Meats is now a world title holder after claiming victory in the World Butcher Wars 2026 final held at Sydney Olympic Park, defeating an international field of 26 butchers including former world champions.
The young butcher who grew up on family sheep and cattle country near Barcaldine and later Pittsworth said he is still taking time to wrap his head around the achievement.
“I don’t think it’s ever going to fully sink in,” Luke told Beef Central at Millers Gourmet Meats this week.
“There was a lot of things going through my mind, a lot of emotion, and there has been a lot of training and hard work put in to get to this moment, so it was definitely a big relief and it was unbelievable when I heard my name get called out.”
Relentless test of speed, skill and creativity
The World Butcher Wars format is a relentless high-paced test of speed, technical skill and creativity.
Competitors had just 30 minutes to break down a half lamb and a pork saddle before transforming the cuts into a themed retail display showcasing value-added products.
Luke’s winning presentation, which he titled “The Gilded Grounds Estate”, combined precision knife work with a fantasy-inspired theme, incorporating gold trimming, numerous intricate value-added pork and lamb meal creations and the unique inclusion of television backdrop.

“We were preparing a lot beforehand, we wanted to keep it simple but clean, have the products really stand out on the plates,” he said.
“All of my displays are kind of fantasy inspired. This one I had a TV in the back playing. It was the first ever display with a TV. It really made the products pop and I couldn’t be anymore happy how it turned out.”

Luke puts a great deal of thought and planning into the display concepts he develops for the competitive stage, often taking inspiration from fantasy novels and popular entertainment.
“I’ve always had a liking for that sort of thing, and fantasy inspired things always catch your eye I feel, and that is what these competitions are all about, I want to create an excitement type of feel for the crowd and the judges and I think I pulled that off.”
A global journey to success
After winning his way to the world final again, this year hosted in Sydney, and despite competing against seasoned international rivals including two former world champions in front of a large live crowd, Luke said he kept his strategy simple.
“From London last year, we’ve been changing things and altering things, and working on products in the shop here and there, then going home to work on the theory side to see how products are going to work, how they’re going to taste.
“You could say it has been years in the making, and this competition definitely a year at least, so a lot of hard work and time.”
Drawn to competitions
Asked why he chooses to enter the high-pressure world of live butchery competitions, Luke said competing is in his blood.
“I’ve always been a competitive person and always wanted to excel at something, and butchery I kind of fell into the trade and the more competitions I did the more passion came with that, it has just been up and on from there.”
For other young butchers he recommends “just having a go”.
“You never know what is around the corner until you give it a try.
“Take me as an example, I fell into butchery and got into the competitive scene, the community is great, it has taken me all across the world, it is a good opportunity, just go for it.”
Grateful for local support
He also paid tribute to the Millers Gourmet Meats community for helping him to achieve his goals.
“From Millers Gourmet Meats, the customers, the sponsors, I couldn’t do it without them.
“We have a great team here, we always bounce ideas off each other.
“That is what it takes, I might be champion, you can’t forget everyone in the background that has got you to that point, so I’m very thankful.”
A proud boss
Keenan Millers from Millers Gourmet Meats said the world title has already sparked strong local interest, with families bringing children into the shop eager to meet a “real-life world champion”.
“It is very impressive, we’re all very proud of him,” Keenen said.
He said Luke has always shown a lot of passion for the industry and “just excels at everything he does”.
“He has been here for nearly two years. From when he started to now, he has grown a lot.”
He said the small butchering business, which also includes family members Jim and Cass, is very supportive of their butchers entering competitions.
They have attended some of Luke’s competitions before, but had to keep the shop running and weren’t able to attend the Sydney World Butchers War final.
But they still did not miss a minute of the action, keeping a close eye on the competition as it unfolded via a livestream.
“Everyone was ecstatic,” Keenan said of the moment Luke’s victory was announced. “We were all watching here in the shop on our phones.
“Everyone was cheering for him. It has put Toowoomba on the map, big time.”
Luke has no plans to stop now and is keen to continue his competitive journey whereever it may take him. While he can’t predict what the future holds, he can now lay claim to a title only a small number of highly skilled people on the planet can match: world champion butcher.
